2 cups mixed berries (strawberries, raspberries, blueberries)
1/2 cup full-fat coconut milk
1 tbsp chia seeds
1 tsp fresh lemon juice
Optional: 1–2 tsp honey or maple syrup (omit for Whole30)

Instructions

1.In a blender, combine berries, coconut milk, lemon juice, and sweetener (if using). Blend until mostly smooth, leaving some berry texture if desired.

3.Pour the mixture into popsicle molds. Insert sticks and freeze for at least 4–6 hours, or until solid.
4.Run molds under warm water for a few seconds to release. Enjoy immediately or store in the freezer for up to 2 weeks.
