1 tbsp apple cider vinegar

2.In a small bowl or jar, combine olive oil, apple cider vinegar, Dijon, garlic, salt, and pepper. Shake or whisk until well blended.
3.In a large mixing bowl, add the roasted sweet potatoes, red onion, celery, red bell pepper, and parsley. Add crumbled bacon, if using.
4.Drizzle the salad with the dressing and toss gently to coat. Serve immediately or chill in the fridge for later. The flavors deepen beautifully over time!
