Ingredients

1.5 lbs boneless, skinless chicken thighs, cut into chunks
1 red bell pepper, chopped
1 zucchini, sliced
1 red onion, chopped into chunks
2 tablespoons olive oil
1 teaspoon sea salt
1/2 teaspoon black pepper
Bamboo or metal skewers

Instructions

1.Prep your grill: Preheat to medium-high heat. If using wooden skewers, soak them in water for 20 minutes.
2.Make the BBQ sauce: In a bowl, whisk together all sauce ingredients until smooth. Set aside.
3.Season the chicken: In a large bowl, toss chicken chunks with olive oil, salt, and pepper.
4.Assemble the skewers: Thread chicken, peppers, zucchini, and onion onto skewers, alternating pieces for even cooking.
5.Grill: Place skewers on the grill. Cook 4–5 minutes per side, brushing generously with BBQ sauce after the first flip. Grill until chicken is cooked through and has char marks.
6.Serve: Plate with extra BBQ sauce and your favorite Paleo sides!
