1 ½ cups Medjool dates, pitted (about 12)
1 cup raw almonds
½ cup raw cashews (or walnuts)
¼ cup shredded unsweetened coconut
2 tbsp chia seeds or flaxseeds
¼ tsp sea salt
½ tsp cinnamon
1 tbsp coconut oil (optional for smoother texture)

Instructions

1.In a food processor, pulse almonds and cashews until crumbly.
2.Add dates, coconut, seeds, salt, cinnamon, and coconut oil. Process until mixture sticks together.
3.Press firmly into an 8x8 parchment-lined pan.
4.Chill for 30–60 minutes until set.
5.Slice into bars and store in fridge for up to 1 week or freeze for longer storage.
